What is Chicago deep-dish pizza?
Chicago deep-dish is a tall, pie-like pizza baked in a high-sided round pan. The order is inverted: a buttery, biscuit-like crust is lined with mozzarella, then toppings, then a layer of chunky tomato sauce on top so the cheese does not burn during the long bake. It is eaten with a knife and fork.
What is the difference between deep-dish and stuffed pizza?
Deep-dish has a single bottom crust with the sauce on top. Stuffed pizza, a later Chicago creation, adds a second thin layer of dough over the cheese and fillings, with sauce spread over that top crust, making it even taller and denser.
