Bologna is the city you visit for tortellini in brodo, tagliatelle al ragu, and mortadella sliced thin enough to read through. Pizza is the order you skip. That instinct is wrong, and has been for about a decade.
Emilia-Romagna sits on top of one of the finest flour benches in Italy. The region's millers feed its bakeries, its bakeries trained a generation of pizzaioli, and the Naples lineage eventually walked north and opened a wood oven inside the walls. The pizza scene in Bolonia is small, quiet, and serious. Locals know it. Tour groups eating cacio e pepe near Piazza Maggiore do not.
Why does Bologna have a real pizza scene at all?
Two reasons. First, the bread culture. Forno-trained bakers understand fermentation, hydration, and flour blends before they ever touch a pizza peel, which is why so many of the strongest dough heads in the city came up through bakeries. Second, the Naples pipeline. Verace Pizza Napoletana is a protected style with a strict rulebook (wood oven near 485 Celsius, 60 to 90 second bake, San Marzano tomatoes, fior di latte or bufala DOP), and Bologna now hosts both AVPN-aligned pizzerias and a literal outpost of the 1870 original from Via Cesare Sersale. That counts. The Napolitana template anchors most of the menus here, with a handful of contemporanea and Roman al taglio pizzerias filling in the edges.
The list below leans hard on the centro storico because that is where the wood ovens cluster, but two of the strongest entries are in Bolognina and the bakery shops scattered across the city.

L'Antica Pizzeria Da Michele Bologna
The original Da Michele has been on Via Cesare Sersale in Naples since 1870 and serves exactly two pizzas: Margherita and Marinara. The Bologna outpost keeps the same official menu. Same dough hydration, same San Marzano, same fior di latte, same blistered cornicione you taste before the toppings. If you have never had a real Neapolitan and you are in Bologna, this is the proof of concept. It is also the spot people argue about loudest, because the original Naples pizzeria got canonized into a Julia Roberts movie and an entire generation of pizzeria tourism. Order the Marinara. The garlic and oregano on tomato is the harder pie to fake.

Ranzani 13
A long, loud pizzeria in Bolognina, a short walk from Bologna Centrale. Wood oven at the back, big-portion Neapolitan pies, generous toppings that lean toward the contemporary side of the style. This is the kind of place students inherit from their older siblings: cheaper than the centro spots, comfortable enough to sit in for two hours, and the dough is well handled. Reliable Margherita, very strong specials with seasonal vegetables.
Pinterre
Modern Neapolitan in the centro using stoneground flours and a longer cold fermentation than the classic 24-hour window. The crust ring blisters dark, the crumb is open without going soggy, and the toppings are restrained. The space is small. Reservations are not optional on weekends.
StorieDiPinte
Pizza and craft beer in equal weight. The style here is contemporanea, the post-2015 evolution of Neapolitan with a higher hydration, a slightly more open crumb, and a softer cornicione. The beer list is the giveaway that someone in the kitchen cares about fermentation across the board. Order a pairing flight, do not show up at 8pm without booking.
Forno Brisa
Bakery first, pizzeria second, but the pizza al taglio coming out of the Brisa shops is the single most reliable slice in the city. Sourdough crust, vegetable-driven toppings that rotate with the season, sold by weight at the counter. Multiple locations across Bologna, which means you are never more than a tram ride from a slice. The bakery training shows in the crumb structure of the base, which holds up under wet toppings like braised greens or stracciatella.
Papeo
Classical Neapolitan, wood oven, no contemporary detours. The order is the Bufala DOP with San Marzano, basil, and a thread of olive oil after the bake. The pizzaiolo lets the cornicione take real color, which is the difference between a Naples pie and a pale imitation. Quiet dining room, family operation, the kind of place you tell a visitor about when they ask for a single recommendation.
La Verace
AVPN-aligned Verace Pizza Napoletana, which means the pizzeria has signed the Associazione Verace Pizza Napoletana rulebook: wood oven near 485 Celsius, 60 to 90 second bake, dough by hand, no rolling pins. The Margherita Extra (bufala instead of fior di latte) is the benchmark. If you want to taste exactly what the AVPN protocol produces in a city that is not Naples, this is the controlled experiment.
Pistamentuccia
Roman food in a city of Neapolitan ovens. The Cipriani family runs two addresses: a trattoria of Roman classics (cacio e pepe, gricia) on Via Testoni, and a pizzeria on Via Riva di Reno that bakes long-fermented pizza in teglia. Order it by the slice.
Porta Pazienza
A social project on Via Pirandello, in the San Donato area northeast of the centro. The kitchen gives work to vulnerable young people, buys from anti-mafia supply chains, and runs a "pizza sospesa" you can pay forward for a stranger. Lunch is a 17 euro menu of fresh pasta; dinner is long-fermented pizza.
O Fiore Mio, Pizze di Strada
The Bologna counter of Davide Fiorentini's 'O Fiore Mio. The flagship is in Faenza, where Fiorentini worked in his family's pastry shop before turning to pizza. Here it is slices and street pizza on Piazza Malpighi.
How we ranked this
We ranked by what the people who came for the pizza actually thought. Not the people who docked a star because parking was hard, not the longest line on a Saturday in July, not the spot with the most reviews from English-speaking tourists. The ten pizzerias above are where Bologna pizza heads eat when no one is filming them.
