The pizzas are fantastic, though the service felt rather average, with waiters giving only superficial attention to guests. Overall, I still recommend it.

Centrally located in Trani, "Lievito 72" has industrial-inspired interior with dim light and many small, interesting details. Name of pizzeria refers to amount of hours that pizza dough was rising and italian word lievito means yeast. Internal design and rather long rising proccess make for a quite unique experience. The dough will have a perceptible amount of acidity and might dominate other ingredients (I personally, really enjoyed it), has a nicely formed crust but, at the same time, maintains its structure and humidity very well. As the place is really very popular and, as a result of that, might be crowded on the weekends you should plan accordingly (planning a visit during workday or before rush-hours).

This is how pizza should be done. Simple. Fresh ingredients. Delicious base. Super-quick, friendly service. No-frills menu. Love the industrial decor. Very pleasant experience overall. Life hack: You'll be too full for dessert but get the cannoli to go. They make THE BEST midnight snack.

Not much to say about good pizza. Good pizza is good pizza. Arrived very fast. I also liked the place. And service perfect. We have been to Lievito 72 in the first evening of our arrival, so it was a great welcome from Trani to us with this great pizza.

We shared a focaccia, had a pizza each and shared a chocolate dessert. Everything was delicious. The pizzas and focaccia are sour dough making it very light and easily digestible. Overall, great food and good value for money.

I have been recommended their pizzas by two different people, and they were not wrong. I made a reservation for a Sunday evening making sure I would get a table. The pizza came out very quickly. Lovely flavours on the top. What a pleasure to see the 3 pizzaioli preparing the pizze in synchronised harmony. I would highly recommend it
