Pizza Nova has been offering its signature square pizza in Tarragona since 1983, a house recipe that answers to neither Naples nor the chains. The dough is kneaded on site every morning and ferments 48 hours. The Vargas leads the menu with bacon, ham and three cheeses, and the Argentine empanadas are made by hand.
