An infrared thermometer reads a surface's temperature from a distance, and for pizza that surface is your stone or steel. The TP30 is laser-sighted with a 12:1 distance-to-spot ratio and reads to 550C, well past the 350 to 450C a hot bake needs.

What temperature should my pizza stone be?
