Common questions

Stainless or carbon steel for pizza?

Both brown the base fast. Carbon steel is cheaper and, once seasoned, browns slightly more aggressively, but it can rust. Stainless steel like this Gi.Metal plate needs no seasoning and will not rust, trading a little cost for lower maintenance.

How do you use a steel baking plate?

Preheat it on an upper-middle rack at the oven's maximum for 45 to 60 minutes, then launch the pizza straight onto it. The stored heat sets and crisps the base quickly. Let it cool fully before handling or cleaning.
