About the Gozney Arc XL

The Arc XL is the larger of Gozney's two Arc ovens, with a 41 cm opening that swallows a full 16 inch pizza. Like the standard Arc it uses an arched chamber and a rolling rear flame to wrap heat over the top of the pizza, and it reaches 950F, though the bigger chamber wants about 25 minutes to get there.

At roughly 58 lb it is a fixed-patio oven. The extra size is the reason to buy it over the standard Arc: room to turn a large pizza and enough stone to feed a group without cooking in shifts. It is gas only, so there is no fire to tend.

Common questions

How big a pizza does the Gozney Arc XL fit?

Up to a full 16 inch (41 cm) pizza, so a New York pie or a large Neapolitan with room to turn it. That extra room over the standard Arc is the main reason to step up to the XL.

How long does the Gozney Arc XL take to heat up?

About 25 minutes to reach its 950F ceiling, a little longer than smaller ovens because the larger chamber and stone hold more mass to bring up to temperature. Give the stone the full preheat for a crisp base on the first pizza.
